You get what you pay for
Besides the quality of the build hardware, higher end fixtures use better ballasts, have better cooling, and high-quality reflectors
The best fixtures use individual silver-coated reflectors for each bulb
Better cooling increases bulb and ballast life, and better reflectors will keep your SPS happy/give you more bang for your bulb buck

One thing that I looked for in a fixture was bulb control
I bought one with 2 plugs for 8 bulbs and re-wired it with 4 plugs

With that said, some people have had good luck with low-cost fixtures, so you'll probably hear about some decent ones
