The key here is to keep things as stable as possible. Reducing supplementation of carbon sources or media beds will have a larger negative impact on a stable system than simply switching to water that should have been used to begin with.

That's the issue here - it's not just reducing the supplementation of organic carbon or whatever other zeovit additives that is going to have the negative impact, but the sudden change in overall nutrient availability. You're going from a nutrient rich (tap water) to a nutrient poor (RO/DI) state before bacterial/skimmer/nutrient export processing. Like any balanced equation, if you take one term out (in this the extra nutrients in the water) you're going to have a deviation from equillibrium.
