Default Lumenarc 3 mini's.

I am looking at the Lumenarc III Mini reflectors (14.5"Lx14.5"W) for my new lighting on my 75G tank (48"Lx18"W)... would 2 reflectors provide adequate coverage over the length of my tank, or should I look at getting 3?

I have 3 on my 220 which is 6 feet long and they work great. Two should be lots of light for a 4 foot tank. Also with it only being 18 " deep you can have them higher off the tank so the light spreads wider.

How high off the water are your units?

I keep my lights pretty low at about 6" off the top of the water, I don't like to much light spillage into the rest of the room.

I am very happy with the results.

Yeah two of these on a 75 will cover everybit of the tank, I had two on my 4x2x2 120g about 9" above the waterline and it covered everywhere. I now have one over my 75g 24x30x24 and still get great coverage.

Yes - there is a screw hole right in the centre that you just put a screw through to the surface you're mounting onto.
