Baffles, at least in my experience do not serve that much purpose. Though I have always had long sumps which might account for my lack of bubbles. I think it is more about strategic placement then the use of baffles. I personally do not believe they are an effective bubble trap. I like the idea of feeding the drain into a pvc pipe (4 or so inches filled with rock or something like it then with drain holes in it..) work nicely, better than baffles.
