I think I saw some maple sheets for sale at Rona, I can't imagine it being that expensive. The only problem I see me running into is maybe human error on fabing the skin and having to re-make it. Check Windsor plywood if you have one near you, sometimes they have good deals, I picked up some sheets of pre finished 3/4" birch for $29 a sheet last year, saves time finishing and they have matching iron on edge banding to cover the plywood edge, you could make yourself a couple finished panels in an afternoon, Lee Valley tools has the rare earth magnets to attach the panels to your stand as well.
