Could a shedding toadstool cause my anenome's to close up and not open up like they used to? It's been a few days now and they are still hiding. Parameters seem fine.

Yes. Having a toadstool or a leather in your tank is much like being stuck in an elevator with a guy who's just had Mexican food: they can release a lot of noxious substances (esp. when you see one shedding). Run some carbon and do a water change.
