Muck.
A beautiful hotel is the PanPacific Hotel.. its quite expensive (we put up Catriona Le May Doan there for $400 a night). but you could probably get cheaper rooms due to the off season... I would also recommend the 4 seasons (I love their half indoor, half outdoor heated pool), fairmont waterfront, or Opus (where all the celebrities stay). the Hyatt, The Sutton, the Westin. all great...
