first they are large "SHOW" chunks which a lot of places refur to as ultra, second they have a fair amount of coraline on them and have been totaly picked clean of nusance algae. (or at least they look like it) I have even seen J&L describe simular sounding stuff as "ultra" or "show quality" as well as other places on the island besides hillside.. there it is just all "premium"
