Patience Grasshopper....
Don't transfer the sand, start with new, or clean it thouroughly. Do a couple of water changes,and save the water.
Move your rock over, add a new piece erver few days.
Ammonia will happen, but you can avoid a harsh spike, with additives like stability.
Don't rush it.

im not that new lol new sand is manditory except for a small cup that will help culture the new sand, my biggest concern is the ammonia spike is there a way to bypass it within a 4 week period

Two choices;
Prodibio Start Up
Seachem Stability
I actually got a 180 going without a spike (or at least not found) withing a week, dosed the hell out of the tank with Stability.
