Do you want fast moving or slow moving water? People commonly tube down the Nechako River that runs around half of Prince George. I tried it last year. We got in at Wilson's Park and out at Cottinwood Island Park before the Nechako River meets the Fraser River (it gets a bit dangerous after that). The ride lasted a little over 4 hours. Or get out a bit earlier after about 3 hours at the Foothills Bridge if floating half way through the city isnt your thing.

In July and August I see quite a few people in the Chilliwack /Vedder river.

Shuswap River in Enderby is a popular tubing spot. I see that Penticton was mentioned already, but that's a pretty short ride, it's basically a canal between Okanagan Lake & Skaha Lake. No beer drinking there I'm afraid, it's fairly family oriented. If the alcohol ban at many campsites this past long weekend is any indication, I'd say it will get more difficult to enjoy a beer or two during summer activities.
