Nice!

If you want to widen your DOF try focusing a little further in, essentially focusing on the center point of the desired DOF. You can also widen your DOF with a larger f number, try something closer to 5.6 instead of 3.5 and use a tripod if you can. Also adjust your exposure compensation one or two clicks to the negative as they are a little over exposed.

Cheers!

What is your "F" number?....I can't seem to find that in the menu

The f-stop is the aperature setting. Where to find that in the menu really depends on your camera. On some digital cameras you have Auto (or Intelligent mode on Panasonics), M-mode and A-mode. A-mode is aperature priority mode and will let you select your f-stop. And like I said, every camera is labeled different so you'll have to look it up.

If you have one of them new fancyass DSLRs, the manual aperature setting might still be on the lens like the old SLRs. It will be an adjustable ring on the lens barrel closeto the camera body.

Those look good, the pink is a little richer. You might be able to knock down the exposure a little bit more. It looks as though you may have found the aperture setting. Getting better, keep experimenting! (though I dig that first candy cane pic up top... snazzy!)

What camera are you using? I might be able to tell you where your aperture adjustment is. Check out this site: http://www.cambridgeincolour.com/tutorials/depth-of-field.htm
It has a pretty good explaination of DOF and aperture (albeit relatively technical). This will tell you how to get those ridiculously good-lookin' pictures that sphelps does.

My camera isn't super fancy but I think it's pretty decent for not being an SLR, it an Olympus SP-57OUZ.

Man, you're kicking my camera's ass. You've got the right idea. It still looks a little washed out (over-exposed) but you're close. If you are finding it hard to reduce the exposure with your camera more you can always try post-processing with Photoshop or GIMP to bring the exposure down a bit and boost the colours a titch.
