I was going to suggest some "adult oriented" entertainment, then realized you were referring to aquarium-related attractions. :)

Check out the Mandalay Bay Aquarium, It is IMO the best "fish" related attraction. Its close to the front end of the strip...

I would second both Mandalay Bay Predator exhibit and the Front Desk Wall Tank at the Mirage.

When are you going? My work is sending my wife and I in early November as a reward for my year. I've been many times but my wife has never been there before.

The Rainforest Cafe in MGM has a couple of Saltwater aquariums.
As mentioned the Shark Reef in Mandalay Bay.

Some non reef stuff...not sure if you've seen them before or not.
Ice Bar in Mandalay Bay. Everything is made of ice. $30 cover charge.
Pussycat Doll section in the casino at Caesars Palace
Pretty good buffet restaurant called "The Buffet" in the Wynn hotel. All you can eat King Crab and Prime Rib.
M&M store by MGM. There's 4 floors of M&M merchandise.
I think there's a carnival behind Circus Circus. I didn't go to it but saw ads. Looked kinda like The Stampede here in Calgary.
There's a bar in Treasure Island where they did bottle tricks and stuff. Looked pretty cool.
Have fun!!

I was rather disappointed with mandalay bay. dont get me wrong it was nice i just thought it was over priced. in and out in <25 min. also impossible to get a decent photo as the glass was 4 inches thin in most cases. the one thing i foud real dissapointing was the lack of lighting. this lead to the fact that i did not see one piece of coral in the entire 1.9 million gallons. ( not all SW, shark reef 1.3 Mill sw)

See pics in my tank pic link in signature.

i have seen them a few years ago. hardly left the casino this time. the rian forest cafe in the mgm grande has 4 nice cylindrical tanks. one has a cylindrical bridge connecting the 2 other cylinders.
