I've been using Global knives for a couple years now, I really like them. A friend has some really expensive Kasumi stuff and I don't see where they are so much better to justify 3 times the price, never mid the stuff you're looking at there.

Henkels and Cuisinart. No need to spend such gargantuan amounts of money on knives. They sure are purty, though :smile:

Same here. They are great knives.. I do need to send one knive to get sharpened though as it turns out using it to cut sod will dull your knive significantly. :razz:

i got some miracle blades off ebay, sounds gay i know but they are sharp as hell and they have 1 mean paring knife that the frozen shimp hate.

I've been using ones I picked up from Ikea years ago. Nice balance and comfortable plus they keep an edge.

I use the white plastic ones,with matching forks and spoons.Under $2 a bag can't go wrong :razz:

I have to say for the money the Miracle Blade makes a good set of knives.They go thru fingers like butter and the doctor says the cut was "like a brand new razor".:redface: GL on your search hope this helps.Clint

I worked as a Chef for years, So I've tried a tone of different knives.
In my kitchen at home you'll find Henckels and ChefMate's (I prefer my ChefMates)
Those are Gorgeous knives, But I don't think I could justify them in a work kitchen let alone my home one.

I have cutco as well, in fact I used to sell it :) best knives I have ever owned, will never get another brand again!

Anyway, I guess it was inevitable, but I've finally sliced off the tip of my thumb with one of the knives (dumb mistake, I know, I WATCH FOOD NETWORK TOO).

Edit: Actually, about Cutco, the Double-D blades were pretty nift, but the straight edge knives left a lot to be desired for knives of that price range.

I stopped selling it because I was maybe 19 and didn't like the pressure. I'm not much of a salesman and I sympathize too much so, I had a hard time asking for people for 800$ for some knives. Even though I love them and wouldn't buy another brand, in fact that is all I have in my house for knives. I was actualy at their factory where they make them, pretty impressive.

The funny thing is I sell the idea of them to people more now than I ever did when I was actualy selling them.

A few people I joined up with are still in the business, its good money if your a good sales person.

Henckels is the only ( not the made in china or English versions ) the real German about 25 years ago got mine 25 years ago still like day one can't beat that best 500. I spent back in chef school....ciao Dave

Heh, agreed. I have one MEAN cheese knife made by Henckels. I use it to cut everything in between though...

I picked up a set of 3 henkel knives at home outfitters on boxing day. It was 50 bucks for the set. Best knives I've ever used.

I prefer wustof trident for solid german style knives and global for japanese blades.
I've used everything in between for the past 10 years in professional kitchens and these two are the ones that stayed in my box.
I've had many henkels before, and had a couple snap on me, which is why I stay away from them now. If you talk to a knife retailer they'll tell you they receive way more returns of henkels compared to wustof trident. The blade breaking occurs when there is a build up of carbon during the forging process creating weak spots in the blade. Tweak it a certain way and "snap!"

There are many other higher end brands and the japanese knives can get into the thousands easily. I was looking at a sashimi knive in Japan and almost had a heart attack when I found out it was $3000! I really don't think anyone can justify buying such an expensive knife as it will get dull like any other knife if it's not taken care of properly. The only blades that don't need sharpening are the ceramic ones, but they require special care as if it's dropped, it's done for good. I worked with a cocky bastard who came to work one day bragging about his expensive "no sharpen" cermanic knives. Near the end of the day he accidently bumped it and it landed on the ground, shattering to pieces. It was pretty funny actually.

Now for home use, almost anything will do as it will never really get abused the way it does in a professional kitchen.
Bang for your buck, I'd go with victorinox. Softer steel that is easier to sharpen, and decent quality for the money, which is why many cooking schools around the country use these as starter sets for up and coming cooks.

I have a funny story about cutco. I had the opportunity to sit through one of the presentations and one of the things they do is cut through a piece of rope to show how they are superior. The poor kid proceeds to get me to cut through with his cutco,(it's brand new and it's serrated, so obviously it's going to cut right through it) and then asks me to get one of my own knives to try the same thing. I grab a global and slice through it like butter; he looked at me, slightly embarassed, and all he could say was "wow, that's a sharp knive!" haha :)

I have shun kershaw knives at home. Probably over priced, but my wife saw me drooling over the japanese knives when we were in Japan and she saw a set locally around xmas and didn't know what else to buy me...

I also own a kyocera ceramic knife that we found on sale at a home outfitter for $20... thought we'd try it out. Very sharp, very light and a little odd feeling. So far no problems with it.

I bought a set of these a few months ago, mines red tho.. I can't say I have ever actually used them.. but it sure looks cool sitting on my counter.

My favorite kitchen (and then some) knife is one I bought at Safeway about 22 years ago. Probably paid all of $10 for it. I prefer it to the $120 Wusthof, which just sits in the drawer most of the time. The "Imperial", as it's called, holds an edge very well.

No.. thats a cheap knock-off. The origninal is made in Italy and called
VooDoo. The sell for about $150.00.

Henckels and Victorinox but the later was to soft. I had a very nice Safeway knife that the ex wife actually made clear she'd fight for it in the divorce... I should have let her have it... but I regress...

Grats man, those are some killer looking knives. I use my santoku shun knife to cut tomatoes and everything else. Blows my friends away that it can stay so sharp for so long.
